Fast Day 34: Didn’t feel v well today! :-(

Break- 6.15am – total 67c

  • 150g strawberries = 48c

Lunch – 12.50pm – veggie fritters- total 161c

  • 409c butternut squash= 184c
  • 61g corgette = 9c
  • 63g broccoli stem = 21c
  • 114g carrot = 36c
  • 11g spring onion = 3c
  • 4g garlic = 5c
  • 30g Patak Butter Chicken paste = 48c
  • 2 x eggs = 138c
  • 1/2 cup – (60g) rice flour = 210c
  • 3 tableS avocado oil = 360c
  • spices:  sweet paprika, cumin, salt – to taste.

Made 27 fritters.  Total 1014 / 27 port = 37c each

  • 10ml sweet chilli sauce = 30c
  • 10g Dairy Farmers Light Sour cream = 20c

 

Dinner – coconut quinoa stew – total 270c

  • 168g Australian Beef & Honey Sausages – 2 sossies = 441c
  • 860g butternut squash = 387c
  • 57g corgette = 9c
  • 282g carrot = 90c
  • 184g celery = 27c
  • 167g broccoli = 56c
  • 109g pak choi = 14c
  • can Woolies Homebrand kidney beans = 266c
  • can homeband chopped tomatoes = 108c
  • 254g Macro Medium Tofu = 142c
  • 25g Woolworths Select Hot Hungarian Salami = 99c
  • 4 x garlic cloves – 25g = 37c
  • 1 x onion – 126g = 37c
  • 20g organic coconut oil = 171c
  • 126g quinoa – 2/3 cup = 475c
  • 50g desicated coconut = 341c
  • Spices:  pinch saffron threads, sweet paprika

Total 2700 / 10 portions = 270c

 

Fast Day 34 total = 498c

 

Made the fritters and dinner yesterday afternoon so that I could work out all my calories.  It’s worked out quite well, because tonight all I have to do is reheat! 🙂

The fritters are super easy, and really tasty!  Basically chop onion and garlic into v small pieces.  Grate all your veg.  Season with the spices and curry paste, and mix it thoroughly.  Pop in microwave for 1-1.5 minutes (depending on how much veg you have!), stir really well, and repeat.  Then fry in oil in batches, until all the mixture is done and you’re left with yummy golden fritters! 🙂

Haven’t found today all that hard, but then for some reason I was feeling a bit sick this morning after my bus journey, so feeling not 100% probably took away my appetite some.  Still really enjoyed my lunch though, and looking forward to dinner in a minute! This quinoa stew thing has become a firm favourite in our household- we’ve got a guest staying with us at the end of the month and I’ll definitely be making this dinner for them!
